- 3 msk malen spiskummin

- 1 tsk oregano
Kålsallad
- 8 dl vitkål, tunt hyvlad
- 1 dl morot, fint strimlad
- 2 tsk salt
- 2 msk äppelcidervinäger
- 2 msk tacokrydda (krydda efter saltning)
Dijon- och vitlöksmajonnäs
- 1 klyfta vitlök
- 2 msk dijonsenap
- 1 äggula
- 0,5 msk äppelcidervinäger
- 1 krm salt
- 1,5 dl matolja
Gör så här
- Gravad och sotad regnbåge
Blanda kryddorna och lägg fisken i en plastpåse, gnid in fisken med kryddblandningen och förslut påsen. - Låt ligga framme till dess att socker- och saltblandningen smält. Lägg sedan i kallt och låt grava över natten (då fisken är delad på längden så gravar den snabbare samt att regnbågen är tunnare än laxen).
- Torka av kryddblandningen från fisken och hetta upp en gjutjärnspanna och sota fisken kort runt om. Fisken ska endast få färg men ej stekas igenom! Låt svalna och skiva sedan fisken i ca 0.5 cm tjocklek.
- Majs- och bovetetortilla
Mixa samman alla ingredienser i en bunke med en stavmixer till det blir slätt. - Värm upp en gjutjärnspanna lätt smord med rapsolja. Slå i 0,5 dl smet och bred ut den med baksidan av en rejäl sked.
- När ytan är torr vänd brödet och stek tils brödet får några bruna fläckar.
- Stapla på hög på en tallrik och täck med en handduk eller en tallrik under tiden resterande steks.
- Tacokrydda
Blanda samman alla ingredienser och förvara kryddblandning som ej går åt i en burk med tättslutande lock. - Kålsallad
Blanda kålen och morotstrimlor med salt och vinäger. Massera in och låt ligga ca 10 minuter innan vätska pressar ur eller skölj lätt i kallt vatten och pressa ur vätskan. - Krydda kålen med tacokryddan och smaka av.
- Dijon- och vitlöksmajonnäs
Riv vitlöken och rör samman med dijonsenap, äggula, vinäger och salt. Rör under vispning ned oljan i en tunn stråle. - Tillsätt ev några droppar vatten. Smaka av och ställ kallt till dess det är dags att servera.
